Doesn't matter if you're .a stressed out student, and over worked business person, or a new parent having a sleepless night - this salty, creamy, crispy, chocolatey delight will bring just a little bit of calm to the middle of your storm.
Serves 1 2 slices sourdough bread 2 tablespoons butter 4 thick slices brie 1 bar 75% dark Yukon Chocolate 1. Butter each piece of bread, place buttered side down on a cutting board then pile brie and chopped chocolate on top, the place other piece of bread on top buttered side up. 2.Heat a skillet over medium high heat, place sandwich in pan and toast until brown, flip sandwich and continue to cook until other side is brown and cheese and chocolate are melted. Remove from pan and eat.

Chocolate MousseYou can't go wrong with a classic. And this simple chocolate mousse is about as classic as that little black dress (or polished white button down dress shirt) we all have in our closets.
Serves 4 3 eggs 1/4 cup sugar, divided 7 ounces chocolate, chopped 1 1/2 cups whipping cream, divided 1. Divide yolks and whites into separate bowl, making sure to not break the yolks. Beat the whites until soft peaks form, then add two tablespoons sugar and beat until stiff peaks form. 2. Place chopped chocolate into a microwave safe bowl and microwave for 30 second intervals until fully melted. Whisk remaining sugar into yolks, then heat 1/2 cup whipping cream over medium high heat until bubbles just begin to form on the surface, then slowly whisk into cream into egg yolk mixture making sure not to ver heat the eggs. Once cream is full incorporated whisk in melted chocolate. 3. Beat remaining whipping cream until firm, then fold in the chocolate mixture in two additions, then fold in beaten egg whites. Divide into glasses/bowls/jars and refrigerate for at least an hour before serving. |
